LEAD COOK

Vacation Myrtle Beach, one of the leading resort condominium marketing groups on the Grand Strand, is seeking an experienced individual for the position of a Lead Cook for our Beach Colony Resort, located at 5308 N. Ocean Blvd, Myrtle Beach, South Carolina.

QUALIFICATIONS

Read and understand English.
Minimum 3 years cooking experience, preferably high volume.
Ability to communicate effectively with the public and other employees.
PERFORMANCE STANDARDS

CUSTOMER SERVICE: Meet service quality standards that affect guest satisfaction; respond to guest questions or problems in a timely, professional manner.
WORK HABITS: Meet the resort standards for work procedures, dress, grooming, attendance, and punctuality; report to work and return from breaks on time; give advance notice when absence is anticipated; require typical amount of supervision; accept work assignments without complaints.
PERSONAL DEVELOPMENT: Accept opportunities to learn new skills, improve performance or cross-train for other resort positions; solve routine problems that occur on the job; ask questions when not sure how to complete something; learn new skills as quickly as most others in the same job.
SAFETY AND SECURITY: Be alert to hazards and responsible in carrying out resort’s safety, security, and emergency procedures; suggest ways to improve safety conditions that reduce or prevent accidents and injuries; participate on safety committee or other special projects for safety; actively seek and report potential security risks or hazardous conditions.
FOOD/BEVERAGE PRESENTATION: Prepare and arrange food or drinks that are attractive and appetizing to the guests; receive few complaints about the food served; inspect food being served; meet service standards.
FOOD/BEVERAGE PREPARATION: Use only quality foods and ingredients; thoroughly wash food and prepare according to standards; accurately estimate cooking times; test foods to ensure quality; assembles attractive food items; amount of waste and spoilage is acceptable; prepare food according to guest specifications.
SANITATION: Follow recommended procedures for handling and storing food supplies in order to control food-borne illnesses and food spoilage; maintain sanitary personal hygiene; maintain local health department standards and receive a passing score on inspections.
SUPERVISION: Maintain staff that meets customer satisfaction; train staff to provide service according to standards; give both positive and negative feedback to employees that is timely and objective; keep accurate documentation of performance.
ESSENTIAL FUNCTIONS

Select, train, supervise, develop, discipline and counsel employees in accordance with resort policies and procedures.
Assist in directing and correcting the presentation and portioning of food according to standards.
Communicate with Management regarding problems, special needs, or any feedback concerning food service or Team Member performance.
Coordinate all food orders between stations and food servers.
Maintain work area clean and organized.
Monitor the quality and consistency of all food served from the lines.
Report all unsafe conditions immediately.
Responsible for food quality and control and proper plate presentation on all restaurant lines.
Set up, restock, maintain and clean food preparation areas.
Display knowledge in sanitation and sanitary food handling.
Ensure the special of the day is completed in a timely fashion.
Perform in the capacity of any position supervised.
Prepare food in accordance with working menus, recipe cards and photos.
Responsible for implementation of all new menu items.

HOUSEKEEPING MANAGER

Beach Colony Resort is seeking an experienced Housekeeping Manager. This is a full time, mid-management position requiring someone with resort experience, supervising housekeepers and completing room inspections. A minimum of 50 hours worked per week. PERFORMANCE STANDARDS

CUSTOMER SERVICE: Deliver the best service, quality and value to every customer, every time. Maintain customer satisfaction as the driving philosophy of the Housekeeping department. Personally demonstrate a commitment to customer service by responding promptly to guest needs. Commit to satisfying every guest. FINANCIAL: Manage department within budget. Accurately forecast expenses. Prepare annual departmental budget that accurately reflects the department’s operations plan. Ensure department staff is trained in control procedures as outlined by Internal Audit, and that these procedures are consistently followed.

Manage human resources functions including recruiting, selection, orientation, training, performance reviews, and pay and recognition programs to maintain a skilled and motivated workforce. Maintain a positive, cooperative work environment between staff and management. Emphasize training and development as a way of doing business in order to empower employees to successfully perform their jobs. Help to develop management talent by acting as a mentor for direct reports. Resolve employee grievances fairly and timely. Ensure employees fully understand performance standards, review process, and reward successes. Manage safety program to protect guests and employees and which meets OSHA requirements. QUALITY: Maintain physical product standards by routinely inspecting rooms, public areas and laundry facilities to ensure proper working condition and departmental supplies are stocked at proper levels. Submit work orders to the maintenance department on a timely basis and follow up to ensure completion. Justify requests for capital projects using ROI. Manage security procedures such as key control and lost and found.

ESSENTIAL FUNCTIONS

  • Assures property operation meets internal audit standards.
  • Coordinate with the General Manager and Chief Engineer in the repair and maintenance program as related to guestrooms and public areas.
  • Demonstrate positive leadership, which inspires employees to meet and exceed standards.
  • Maintain work areas neat and organized.
  • Maintain inventory of guestrooms and housekeeping supplies including all month-end inventories.
  • Promote employee empowerment.
  • Report all unsafe conditions immediately.
  • Select, train, supervise, schedule, develop, discipline, and counsel employees according to VMB policies and procedures.
  • Attends as well as schedules and conducts departmental meetings.
  • Completes reports (i.e., forecasts, annual budgets, action plans, etc.).
  • Coordinates all the needs of the Housekeeping department.
  • Follow through on guest complaints and requests regarding room services and ensure the appropriate follow-up with guests.
  • Inspect property guestrooms, linen rooms, public areas, and all office space to ensure company standards of housekeeping are being maintained.
  • Purchase all basic cleaning supplies, linen, and equipment.
  • Conduct performance appraisals.

OTHER JOB DUTIES

  • Maintain lost and found.
  • Coordinate training for new employees.
  • Perform in the capacity of any person supervised to include cross training.
  • Performs all other duties as assigned by supervisor.
  • Inspect rooms for VIP arrivals.

KITCHEN MANAGER

Beach Colony Resort is seeking a Kitchen Manger. The Kitchen Manager will be responsible for kitchen operations including provisioning, food preparation, inventories, ordering and sanitation. This position directs the training of kitchen workers and servers; engaging in preparation, cooking, and serving to ensure an efficient and profitable food service. The position demands creativity on a daily basis, excellent communication skills, and the ability to maintain the highest of culinary standards. The Kitchen Manager works well under pressure, is organized, flexible, self-motivated and is willing to work long hours.

QUALIFICATIONS

  • Five years of cooking experience.
  • Serve Safe Certified.
  • Prefer two to three years of fine dinging experience.
  • Prefer banquet experience.
  • Ability to communicate effectively with the public and other employees.
  • Previous supervisory/management skills and experience.


PERFORMANCE STANDARDS

  • CUSTOMER SERVICE: Personally demonstrate a commitment to customer service by inquiring about service quality and responding promptly to guest needs. Promptly handle guest complaints. Fill in for staff when necessary to ensure customer satisfaction. Ensure staff, including all new hires, are trained to meet standards.
  • FINANCIAL: Manage department within budget. Anticipate revenue/cost problems and report all discrepancies to the Food and Beverage Director. Ensure department staff is trained in control procedures as outlined by Internal Audit.
  • PEOPLE: Manage people according to VMB’s values. Maintain a positive, cooperative work environment between staff and management. Mange safety program to protect guests and employees and which meets OSHA requirements.
  • QUALITY: Have knowledge of restaurant standards and hold employees accountable for consistently meeting these standards. Maintain favorable health department scores.
  • MANAGING THE BUSINESS: Assist in the preparation of the F&B budget. Adjust inventory, department labor schedules, staff assignments, and supplies based upon demand without loss in quality service.
